Ingredients:
4 Tb Vegetable oil
5 Cloves Garlic, finely chopped (I used 2)
2 Green Chilies, diced (I used a can of diced green chilis)
2 Cups cubed boneless, skinless chicken breast meat
2 Cups cooked Jasmine Rice, chilled (I used the rice I have.... right after it was finished cooking)
1 Tb White Sugar
1 Tb Soy Sauce
2 teaspoons Chopped Green Onion
2 Tb Chopped Fresh Basil Leaves (I just used some from my cupboard)
5 Tb Chopped Fresh Cilantro
Directions:
Heat the oil in a wok or large skillet, over medium-heat. Fry the garlic until golden, then add the chilies and chicken meat, and stir-fry until cooked through.
When the chicken is cooked, add the rice, sugar, and soy sauce. Cook over medium heat, stirring gently. When the mixture is well blended, stir in the green onions, basil, and cilantro. Cook for 1 more minute, then serve hot.
Its pretty good, seems to be missing something though. Best part, Matthew said he'd eat it again!!

Once Prominent, Now Missed.
People come and go, right? I guess sometimes they can come back.
Dear APM,
It was good to be your big sister for a while.
You were fun, but a horrible friend.
It was nice to be needed.
I miss you.
Love, your Big Sis.
Dear Elder BRB,
You stopped writing.
Thank you for being my friend,
and for understanding me when I didn't want to be understood.
From, Me.
Dear Captain,
Member when we were twins?
We were the coolest.
I miss you.
Why is the rum always gone?
Love, your friend Gibbs.
Dear Fenn,
We had lots of fun.
Now I guess we are both grown ups.
Good for us.
From, Me.
Dear Hoel,
Isn't it November yet?
Come home!
I miss your face.
Remove stick from butt.
Love, Tripod.

Another Post for my Class....
I have to show my professor that I can upload pictures into Picasa, and then put them on my blog. You can't complain though, you get to see three of my favorite pictures of Matthew and me!
The summer we were dating. On a group date/scavenger hunt.
One of our engagement pictures.
At our friends' wedding.

Dinner: FAIL.
Tried to make corned beef tonight. Meh. Not our favorite. Matthew is so picky I have a hard time feeding him at all, so I asked friends for recipes and got a giant list.
I'm going to start with recipes from my sister Danielle, and see if Matt will eat anything and actually like them. Wish us luck!
New foods to be tried soon:
-Pizza Biscuits
-Chicken Tacos in the crockpot
-Crockpot Burritos
-Swiss Steaks in the crockpot
-Chicken Croissants
-Ranch Chicken and Potatoes
-Chicken Croissants Casserole
-Wingers Chicken Strips
-Chicken and Rice in the crockpot
-Shepherd's Pie
-Chicken Chili and Rice
-Chicken Licken Pork Chops in the crockpot
